With the beans, the corn, the tortillas, and the guacamole!<br>\nThis Mexican Rice is a favorite standby, with easy Ingredients, quick and<br>\nsimple in the Instant Pot\u2014and hands down, one of my favorite Mexican<br>\nRice recipes\u2026 ever!<\/p>\n\n\n\n<p><strong>From Ayurvedic Point of view:<\/strong><\/p>\n\n\n\n<p>In Ayurvedic terms, rice is said to be quite balancing to all the three<br>\nDoshas or elements that underlie our body and our wellbeing\u2014Vata, Pitta,<br>\nand Kapha. Rice is lighter than many other grains, so that it can be eaten<br>\nby Kapha; it&#8217;s cool, sweet, and moist nature function for Pitta; and sweet<br>\nmoist attributes balance Vata.<\/p>\n\n\n\n<p>Corn pacifies Kapha and Pitta Dosha. It is beneficial for general fatigue,<br>\nanorexia, hemorrhoids, and emaciation. The desire to pacify Pitta renders<br>\nit a perfect summer meal. This nourishes Rasa Dhatu (plasma) and is<br>\nbelieved to minimize water retention and blood pressure.<\/p>\n\n\n\n<p>For vegetarians, beans , dals, and lentils are an essential source of<br>\nnutrition\u2014protein, complex carbohydrates, fiber, and vitamins. As<br>\nversatile as they are tasty, dals and lentils are used to make salads,<br>\nappetizers, soups, main dishes, side dishes, and desserts, too. They fit<br>\nwell with other foods, such as grain, vegetables, herbs, and spices.<\/p>\n\n\n\n<p>Servings: 7<br>\nTime to Prepare: 9 minutes<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Ingredients:<\/h5>\n\n\n\n<p>2 cups uncooked long-grain rice<br>\n14 oz can corn<br>\n1\/4 tbsp. garlic powder<br>\n1\/4 tbsp. ground cumin<br>\n14 oz can black beans<br>\n2 cups water<br>\n2 fresh tomatoes (chopped)<br>\n1 tbsp. vegetable oil<br>\n1 cup salsa<br>\nJuice of 1 lime<br>\nSalt and pepper to taste<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Instructions:<\/h5>\n\n\n\n<ol><li>Turn on the Saut\u00e9 settings. Add the oil and the rice once hot.<br>\nStir until the rice goes opaque. Cancel the Saut\u00e9 and add the<br>\nsalsa, water, garlic powder, and cumin to the rice. Stir it and<br>\nlock it with the lid. Place on High Pressure Manual and cook for<br>\n4 minutes. When the rice is cooked, naturally release the<br>\npressure for 10 minutes before removing the residual pressure<br>\nrapidly.<\/li><li>In the meantime, drain and rinse both the beans and the corn; set<br>\naside. Chop the tomatoes, and add the lime juice. Once the<br>\npressure has been released, remove the lid and flush the rice<br>\nwith a fork. Add the beans, the corn, the tomatoes, and the lime<br>\njuice.
