Instant Pot Lentil Chili is<br>\nprepared in less than 30 minutes and is a tasty, delicious vegetarian\/vegan<br>\nmeal.<br>\nFrom Ayurvedic Point of View:<br>\nFor vegetarians, beans , dals, and lentils are an essential source of<br>\nnutrition\u2014protein, complex carbohydrates, fiber, and vitamins. As<br>\nversatile as they are tasty, dals and lentils are used to make salads,<br>\nappetizers, soups, main dishes, side dishes, and desserts, too. They fit well<br>\nwith other foods, such as grain, vegetables, herbs, and spices.<\/p>\n\n\n\n<p>Servings: 6<br>\nTime to Prepare: 30 minutes<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Ingredients:<\/h5>\n\n\n\n<p>2 cups dry lentils picked (rinsed and drained)<br>\n1 tbsp. olive oil<br>\n1 tbsp. chili powder<br>\n1 tsp. cumin powder<br>\n1 medium onion (chopped)<br>\n3-4 cloves garlic (minced)<br>\n1\/4 tsp. pepper<br>\n1-1\/2 cups crushed tomatoes<br>\n3 cups low-sodium vegetable broth<br>\n2 carrots (chopped)<br>\n1 celery stalk (chopped)<br>\n1\/2 tsp. coriander powder<br>\n1 tsp. dried oregano<br>\n1\/2 tsp. dry mustard<br>\n1\/4 tbsp. cayenne pepper (optional)<br>\nSalt to taste<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Instructions:<\/h5>\n\n\n\n<ol><li>On Instant Pot, select the Saut\u00e9 settings. Add the oil and let it<br>\nheat up.<\/li><li>Add the onion, garlic, carrots, and celery. Saut\u00e9 until the onions<br>\nare softened and lightly browned for around 4 minutes.<\/li><li>Add chili powder, cumin, coriander, oregano, mustard, and<br>\ncayenne (if you like some heat) and mix well for a minute or<br>\ntwo. Add tomatoes, lentils, broth, salt, and pepper to match.<\/li><li>Click the &#8220;Cancel&#8221; button, and then close the lid. Turn the steam<br>\nrelease handle to the Sealing position.<\/li><li>Select Bean\/Chili and set the time for 14 minutes (Note: if you<br>\nuse red lentils, the cooking period would be less than ~ 7-8<br>\nminutes).<\/li><li>Click &#8220;Cancel&#8221; and let Instant Pot automatically relieve for 10<br>\nminutes before the float valve drops and the lid unlocks.<\/li><li>Then turn the steam release valve to Venting until the float<br>\nvalve drops down and lid unlocks.<\/li><\/ol>\n\n","protected":false},"excerpt":{"rendered":"<p>When I&#8217;m low of time, I enjoy this recipe.
