As a result, onions<br>\nand garlic are known as blood purifiers in Ayurveda. While garlic has<br>\ncuring properties, onions have cooling properties and are a perfect summer<br>\nsnack. Onions are sweet in flavor and help promote better digestion.<br>\nChili , the hottest of all Rasas (tastes), boosts appetite, clears the sinuses<br>\nand increases blood circulation. A pungent spice, like cayenne pepper,<br>\ntastes hot and remains spicy from start to finish. It&#8217;s sure to balance a wet,<br>\nheavy Kapha, but it may be too hot and dry for a Vata when taken in<br>\nabundance or combined with too many other drying foods.<\/p>\n\n\n\n<p>Servings: 4<br>\nTime to Prepare: 30 minutes<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Ingredients:<\/h5>\n\n\n\n<p>1 tsp. oil<br>\n1 small onion (chopped)<br>\n6 cloves of garlic (finely chopped)<br>\n2 tsp dried fenugreek leaves (have some extra for garnish)<br>\n1-inch of ginger (finely chopped)<br>\n1 hot green chili (serrano or bird&#8217;s eye)<br>\n1 tsp. turmeric<br>\n28 oz diced tomatoes(including juices) + 2 ripe tomatoes<br>\n(chopped)<br>\n1 tsp. paprika (a combination of sweet and smoked)<br>\n1 tsp. coriander powder<br>\nSmoked paprika or cayenne for garnish<br>\n1\/2 cup non-dairy yogurt (plain or lightly flavored)<br>\n1\/2 tsp. cayenne<br>\n1 tsp garam masala (curry powder)<br>\n1\/4 cup chopped red or green bell pepper<br>\n3\/4 tsp. salt<br>\n1\/4 cup non-dairy cream like cashew, soy, or coconut (optional)<\/p>\n\n\n\n<h5 class=\"has-luminous-vivid-orange-color has-text-color\">Instructions:<\/h5>\n\n\n\n<ol><li>Press Saut\u00e9 on Instant Pot. When the oil is hot, add the finely<br>\nchopped onion, ginger, garlic, and chili. Add a small pinch of<br>\nsalt, mix well and simmer for around 3 minutes. Also, stir<br>\noccasionally.<\/li><li>Add the spices and mix properly. Add the bell pepper and mix<br>\nproperly. Add tomatoes, yogurt, and salt and mix well. (Stir well<br>\nfor a few seconds to clean up the scorched onion bits, otherwise,<br>\nthey appear to scorch further and cause Burn errors in certain<br>\nvulnerable Instant Pots).<\/li><li>Cancel Saut\u00e9. Secure the lid. Pressure Cook for 11-12 minutes<br>\n(High Pressure Manual).<\/li><li>Allow the pressure to escape naturally. Open the lid now. Mix,<br>\ntaste, and adjust salt, flavor, heat. If required, add some sugar or<br>\nmaple syrup. (Add 1\/2 tbsp. if you&#8217;re using plain unsweetened<br>\nyogurt). Add some more fenugreek leaves or cilantro, some<br>\nfreshly ground paprika or cayenne and garam masala for<br>\ngarnish.<\/li><li>You can freeze the tikka masala sauce for up to 2 months at this<br>\nstage and refrigerate for up to 4 days. Add some non-dairy<br>\ncream for a creamier texture and use or refrigerate. You can also<br>\nmix half of the sauce to make it smoother.<\/li><\/ol>\n\n\n\n<h5>Notes:<\/h5>\n\n\n\n<ol><li>Just like with all Indian recipes, I seek to keep the flavors as<br>\nreal as possible while keeping it simple. You can adjust certain<br>\nitems depending on supply and choice (non-dairy yogurt can<br>\neasily be subbed for non-dairy cream or milk). It doesn&#8217;t ruin<br>\nthe great taste; the sauce is flavorful enough, and some<br>\nmodifications here and there don&#8217;t influence the taste.
